Ingredients For potato & mushroom gratin

  • 1/2 stick
    butter, unsalted
  • 1 - 8 oz pkg
    button mushrooms, sliced
  • 1 lg
    onion, chopped
  • 2 c
    heavy whipping cream
  • 2 tsp
    salt
  • 1 tsp
    pepper
  • 2 lb
    potatoes, peeled & thinly sliced
  • 16 oz
    swiss cheese, shredded
  • 2 Tbsp
    chives, dried

How To Make potato & mushroom gratin

    Preheat oven to 325 degrees F. In nonstick 12" skillet, melt butter over medium high heat. Add mushrooms & cook 6 - 8 minutes or until mushrooms begin to brown. Stir in onion & cook 4 - 5 minutes or until mushrooms & onions are tender, stirring occasionally. Stir in cream, salt & pepper; heat to boiling. Reduce heat to medium low; simmer 2 minutes, stirring occasionally.

    Spray shallow 3 qt glass or ceramic baking dish with nonstick cooking spray. Spread 1/2 of potato slices in dish, then top with 1/2 of mushroom mixture; sprinkle evenly with 1/2 of Swiss cheese. Repeat layering ending with chives on top.

    Bake, uncovered, 1 hour - 1 hour; 10 minutes or until potatoes in center are fork tender & top is golden. Let stand 10 minutes before serving.
