I love ethnic foods and kugel is one of my favorites. It's a Jewish casserole dish. There's also a noodle kugel which is very good. There are so many variations to these dishes. Feel free to add veggies, if you like... carrots, zucchini, etc.

Kugel is commonly served on Jewish holidays and Shabbat. This potato kugel recipe is similar to a hash brown casserole but made with simpler ingredients. It's a delicious side to any meal with a soft potato center and a crunchy top.

Ingredients For potato kugel

  • 6 lg
    eggs
  • 1/2 c
    oil
  • 4 Tbsp
    all-purpose flour
  • 1 Tbsp
    (heaping) salt
  • 1/2 tsp
    pepper
  • 8 md
    Russet potatoes, peeled
  • 2 md
    onions

How To Make potato kugel

  • Oven preheating.

    Preheat oven to 400 degrees F. Grease a 9 x 13-inch baking dish.
  • Eggs, oil, flour, salt, and pepper in a bowl.

    In a large bowl, mix eggs, oil, flour, salt, and pepper. Set aside.
  • Grated potato and onion in a bowl.

    Coarsely grate the potatoes and onion by hand or with a food processor. Let stand for 3-5 minutes. Squeeze out the excess liquid.
  • Potato and onion added to egg mixture.

    Add the potatoes and onion to the egg mixture. Mix by hand.
  • Mixture poured into a baking dish.

    Pour mixture into the greased baking dish. Spread the mixture as evenly as possible.
  • Potato Kugel baking in the oven.

    Bake, uncovered, for 1 hour or until golden brown on top and a knife inserted in the middle comes out clean.
