- leftover mashed potatoes
- 1/4 c
- diced onion
- bread crumbs, seasoned
- vegetable oil for frying
1mix cold mashed potatoes with onions
2using a fork beat eggs with 1/4 cup water to make an egg wash
3form potato mixture into egg shaped croquettes, dip into egg wash then into bread crumbs to coat.
4heat vegetable oil in frying pan and fry on medium heat till browned and crispy.
