I had a little bit of mashed potatoes left from the night before and couldn't deside if I wanted corn fritters or potato pancakes, so I combined them. Boy were they good.

Ingredients

1 can(s)
cream corn
1 c
mashed potato (stiff either fresh made or leftover)
1 large
egg
1/2 c
flour
1 tsp
baking powder
salt and fresh ground pepper to taste

Directions Step-By-Step

In a bowl combine all the ingredients and drop by table spoon fulls into a hot well oiled frying pan, cook until done flipping half way through.

Serve with either butter salt and pepper like I like them or with maple syrup like Eric likes them.
