Potato, Cheese & Bacon Casserole

- sliced bacon
- medium potatoes, peeled & diced
- 1 lb
- velveeta cheese, cubed (original)
- 1 c
- hellman's mayonnaise
- 1/2 c
- chopped onion (reconstituted ok)
- 1/2 tsp
- pepper to taste
1Cook potatoes, about 10 minutes on high. Drain & put back in pan.
2While cooking potatoes, fry (or nuke, less greasy!) bacon until almost done, still a little limp - cool.
3Combine potatoes, cheese, mayo, onion, salt & pepper.
4Spoon into 9x13 glass baking dish, sprayed with non-stick cooking spray. Crumble and sprinkle bacon on top.
5Bake, uncovered, at 350 degrees for 1 hour, or until heated through.
