Another easy Crockpot recipe!!

pinch tips: How to Peel Potatoes




1 can(s)
cream of chicken soup
1 c
sour cream
1/4 c
chopped onion
1/4 c
plus 3 tbsp. butter, melted, and divided
1 tsp
2 lb
potatoes, peeled and cubed (i prefer yukon gold)
2 c
(8 oz) shredded cheddar cheese
1-1/2 c
stuffing mix (maybe a little more so it is all covered)

Directions Step-By-Step

Combine soup, sour cream, onion, 1/4 cup butter and salt in a small bowl. Combine potatoes and cheese in the crockpot. Pour soup mixture over potato mixture; mix well. Sprinkle stuffing mix over potato mixture; drizzle with remaining 3 tablespoons butter. Cover; cook on LOW 8-10 hours or on HIGH 5-6 hours or until potatoes are tender. You could cook this in a conventional oven at 375 for about 45-50 minutes or until potatoes are tender.
