Pot luck potatoes

In my quest to make a quick, easy side dish, I did a pantry and fridge raid and this is what I came up with.
Leftover veggies from pizza and some red potaotes, and pepperjack cheese. A delicious combo.

Ingredients

6 slice
red potatoes
2 medium
portabello mushrooms, sliced
1/2 c
green bell, sliced
1/4 c
red onion, sliced
4 oz
pepperjack cheese, grated
1/2 tsp
granulated garlic
1 tsp
mrs. dash original blend
pinch
red pepper flakes
1 Tbsp
olive oil

Step-By-Step

1Slice red potatoes, skin on, very thinly into rounds. Place in bowl and drizzle with olive oil. Make sure each individual potato round is coated.
2Place in non stick skillet, add onion and bell pepper, seasonings. Cover and cook on med-low, turning often till potatoes are tender. About 10 min before end of cooking, add mushrooms.
3Turn off heat, sprinkle on grated cheese and allow to melt.
