1Preheat oven 450 F. Spray a non-stick baking sheet with nonstick spray.
2In a large bowl, combine the potatoes, salt, and sugar with cold water to cover. Soak for 15 minutes, drain and blot dry.
3In another large bowl toss the potatoes with oil and your favorite seasonings. Place in a single layer on baking sheet. Bake, turning the potatoes over as they brown until cooked trough and crisp, about 45 minutes. Sprinkle with salt and perpper
