Onion Baked Potatoes

These are so good, yet so simple. They could also be done on the grill.

We love them. I especially love using Yukon Golds, or New Red Potatoes. Use whatever your favorite is. If I only make 3 potatoes, I drizzle the potato with the remaining onion butter warmed up...Yum!

Also, to speed up the process, I have sliced the potatoes as recipe calls, microwave for about 5 minutes. Then spoon on the onion butter, and bake.
