It is an old family recipe, used for, probably 100 years. We had it every holiday, and, because we loved it so much, we began having it all year long.

Ingredients For o'brien potatoes

  • 4 lg
    potatoes, russets
  • 1/2 c
    butter
  • 1 Tbsp
    parsley
  • 1 small can
    pimento
  • salt as needed

How To Make o'brien potatoes

  • 1
    Cook potatoes (with their jackets on) until just done. Peel and cube and put into 1 1/2 qt. baking dish. Add the next 4 ingredients - toss potatoes to coat well, and bake at 450(degrees) for 1 hr.
