Ingredients For totchos casserole

  • 1 3/4 c
    cubed processed American cheese
  • 2 c
    crushed nacho-flavored tortilla chips
  • 1 lb
    lean ground beef
  • 3
    green chiles, chopped
  • 1 lg
    red onion, diced
  • 2 Tbsp
    steak seasoning
  • 1 c
    heavy cream
  • 1 can
    evaporated milk (10.75 oz)
  • 8 oz
    cream cheese, softened
  • 1 can
    cheddar cheese soup (10.75 oz)
  • 1 pkg
    taco seasoning mix
  • 1 pkg
    frozen tater tots (32 oz)
  • 1 1/2 c
    shredded Mexican cheese blend

How To Make totchos casserole

    Preheat oven to 350 degrees F.

    Coat a 9x13-inch casserole dish with cooking spray. Add cubed American cheese and crushed nacho-flavored tortilla chips, mix well.

    Heat avocado oil in a large, deep skillet over medium-high heat. Add ground beef, chopped green chiles, diced red onion and steak seasoning.

    Cook and stir mixture until the beef is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Set aside.

    Melt margarine in a medium saucepan over medium heat. Combine heavy cream, evaporated milk, cream cheese, soup and taco seasoning, stir well and let it simmer for 5 minutes until smooth and thickened.

    Mix in beef mixture until combined. Remove from heat.

    Layer tater tots in a prepared casserole dish.

    Bake in the preheated oven until tater tots begin to crisp and cheese is melted, about 10 minutes.

    Remove from oven. Spoon ground beef mixture over tater tot mixture evenly and sprinkle with shredded Mexican cheese blend.

    Return to the oven and bake for 20 minutes until the cheese is melted.
