Mom Thurlby was my mother-in-law but I thought of her as my mom. She made this potato salad for every picnic, BBQ and family gathering and there was never any left over!This tastes so awesome after it has sat in the fridge over night. Try it with everything before you omit ingredients. I hate radishes but I love them in this! If you leave out the cucumber and green olives and add bacon, you have my mother's potato salad which is very good also! I hope you like this! ENJOY! Yummy stuff!

Ingredients For mom thurlby's super yummy potato salad

  • 5 lb
    potatoes (boiled or baked, peeled and diced)
  • 4 Tbsp
    dill pickle relish
  • 1/2 c
    celery (diced)
  • 1 md
    green bell pepper (cleaned and diced)
  • 1 md
    onion (diced)
  • 6 lg
    radishes (diced)
  • 1/2 c
    green olives (rough chopped)
  • 2 md
    roma tomatoes (diced and drained)
  • 1 lg
    cucumber (seeds removed and diced small)
  • 6 lg
    hard boiled eggs (chopped)
  • 2 to 2 1/2 c
    mayonnaise (i like hellmans... adjust mayo to taste)
  • 2 Tbsp
    spicy brown mustard
  • 2 Tbsp
    parsley flakes

How To Make mom thurlby's super yummy potato salad

    I like to dice my vegetables for this small and my potatoes into about half inch cubes but dice them to any size you wish. Mix everything except potatoes, mayo and eggs together. Let stand for about 30 minutes for flavors to meld some.

    Add potatoes and mix well with vegetable mixture. Add mayo and eggs. mix well. If you like less mayo then try 2 cups. I usually start with almost 2 cups and see how the consistancy is the add from there. Now salt and pepper to taste.

    I like to use russet potatoes. I like the fluffy potato consistancy. Sometimes I add some horseradish to give it a little kick. I made 50 lbs of this for a friends wedding and there wasn't any left!
