I LOVE a good mustard potato salad, but always felt something was missing with the way I was taght to make it. I spend a lot of time tasting different recipes.
I happen to try a fellow PINCHERS "
Spring Hill Ranches Deviled Eggs", and OMG (light bulb). This is what it came up with.....

Ingredients

POTATO SALAD IS ALWAYS BETTER WHEN MADE A DAY AHEAD OF CHOW TIME !

4 medium
red potatoes
4 large
eggs, hard boiled
1 pinch
salt
1/2 c
sandwich spread
2 Tbsp
ground mustard or yellow mustard
1 medium
scallion or onion
1/2 tsp
*liquid smoke flavoring
1/2 tsp
cumin ground
1 small
apple peeled and diced
1 Tbsp
*brown sugar
1 tsp
paprika
1 tsp
black pepper
1/2 tsp
cayenne pepper
1/2 small
green bell pepper (finley chopped)
4 slice
bacon (crisp and crumbled)

Directions Step-By-Step

I large bowl mash boiled eggs, leave a little lumpy. 8 )

Once egg are mashed

Add ALL other ingredients (except potatoes)

Mix all together well

Add Crumbled Bacon and boiled cut potatoes mix well

Taste for salt ( if needed add more)

Transfer into serving dish, springle with paprika and decorate.
"YES I SAID DECORATE", food desires to be pretty too.
