Microwaved Potato Lyonnais

Ingredients

large potatoes, peeled and cubed
2
small onions, sliced
2 Tbsp
margarine
2 clove
garlic, minced
1/2 tsp
salt
1/8 tsp
dried oregano
1/8 tsp
paprika

Step-By-Step

1In a 3-quart microwave-safe casserole dish, combine potatoes, onions, margarine, garlic, salt, oregano, pepper and paprika.
2Heat in microwave on high until margarine melts, about 1 minute; stir. Cook 10 minutes more, stirring occasionally.
3Alternate: Use red potatoes instead, so you won’t have to peel the potatoes. Use garlic powder in place of the minced garlic.
