Mexican Baked Potato

- leftover or fresh baked potato(es)
- lean taco meat
- canned or homemade enchilada sauce
- 2% cheddar cheese, shredded
- red onion chopped, or pico de gallo
- light sour cream
1Slice, dice, cube or smash baked potato on plate, top with taco meat, cheese, diced onion, and drizzle on enchilada sauce. Pop into micro for 2-3 min. Garnish with sour cream.
Other good garnishes would be diced tomatoes, pico de gallo, salsa verde, red salsa.
