| 1 1/2 lb | red potatoes, quartered |
| 1/2 tsp | salt |
| 1/4 tsp | pepper |
| 1 lb | shrimp, peeled, deveined & tails off, cooked |
| 3 c | romaine lettuce leaves, sliced |
| 1 c | red bell pepper, cut into 1/4" strips |
| 1 c | yellow bell pepper, cut into 1/4" strips |
| 1 c | red onion, sliced |
| 1 c | feta cheese, crumbled |
| 2 Tbsp | kalamata olives, pitted & chopped |

DRESSING:
Combine all ingredients; whisk well.SALAD:
Arrange potatoes in a single layer on a microwave safe dish, sprinkle with salt & pepper. Microwave on HIGH 15 minutes or until potatoes are tender. Place potatoes in a large bowl.Add shrimp & 1 T dressing to potatoes, toss to combine. Add remaining dressing, lettuce, peppers, onion & cheese; toss gently to coat. Top each serving with 1 1/2 tsp olives.WEIGHT WATCHERS POINTS PLUS: 9
