Ingredients

  • DRESSING:
  • 1 1/2 tablespoons basil, fresh, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil, extra-virgin
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 1/4 teaspoon Dijon mustard
  • SALAD:
  • 1 1/2 pounds red potatoes, quartered
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound shrimp, peeled, deveined & tails off, cooked
  • 3 cups romaine lettuce leaves, sliced
  • 1 cup red bell pepper, cut into 1/4" strips
  • 1 cup yellow bell pepper, cut into 1/4" strips
  • 1 cup red onion, sliced
  • 1 cup feta cheese, crumbled
  • 2 tablespoons kalamata olives, pitted & chopped

How To Make mediterranean potato salad

  • Step 1
    DRESSING: Combine all ingredients; whisk well.
  • Step 2
    SALAD: Arrange potatoes in a single layer on a microwave safe dish, sprinkle with salt & pepper. Microwave on HIGH 15 minutes or until potatoes are tender. Place potatoes in a large bowl.
  • Step 3
    Add shrimp & 1 T dressing to potatoes, toss to combine. Add remaining dressing, lettuce, peppers, onion & cheese; toss gently to coat. Top each serving with 1 1/2 tsp olives.
