Ingredients
- DRESSING:
- 1 1/2 tablespoons basil, fresh, chopped
- 1 tablespoon lemon juice
- 1 tablespoon olive oil, extra-virgin
- 1 teaspoon sugar
- 1/4 teaspoon pepper
- 1/4 teaspoon Dijon mustard
- SALAD:
- 1 1/2 pounds red potatoes, quartered
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 pound shrimp, peeled, deveined & tails off, cooked
- 3 cups romaine lettuce leaves, sliced
- 1 cup red bell pepper, cut into 1/4" strips
- 1 cup yellow bell pepper, cut into 1/4" strips
- 1 cup red onion, sliced
- 1 cup feta cheese, crumbled
- 2 tablespoons kalamata olives, pitted & chopped
How To Make mediterranean potato salad

Step 1DRESSING: Combine all ingredients; whisk well.

Step 2SALAD: Arrange potatoes in a single layer on a microwave safe dish, sprinkle with salt & pepper. Microwave on HIGH 15 minutes or until potatoes are tender. Place potatoes in a large bowl.

Step 3Add shrimp & 1 T dressing to potatoes, toss to combine. Add remaining dressing, lettuce, peppers, onion & cheese; toss gently to coat. Top each serving with 1 1/2 tsp olives.
