Meatloaf ala Sauteed Onions

A varied version of individual meat loafs. I love sauteed onions and this is one version my family loves. Pork loin sliced thin works wonderfully in place of the meatloaf. When it comes to being the cook everyone should remember all of those wonderful smells and comforting meals. I agree with the statement that cooking is a labor of love. Add a salad, vegetable, or dinner roll and your family will love this meal.

Ingredients

350
degree preheated oven
6-8 medium
onions, sliced thin
2 Tbsp
butter to caramelize the onions
2 Tbsp
olive oil added to caramelizing the onions
1+ lb
lean ground beef
2/3 c
oats, quick cooking
2 large
eggs: using only one yolk and 2 egg whites
1 Tbsp
worcestershire sauce
1/2 c
chopped onion
1/3 c
milk
1 tsp
garlic powder
1/4 tsp
fresh ground pepper (i use burger grill seasoning individual grinder bottle)
1/2 tsp
seasoning salt
1 pkg
betty crocker loaded mashed potatoes mixed according to package
1 pkg
betty crocker homestyle reds prepared according to the package
1 c
grated sharp cheddar cheese

Directions Step-By-Step

BEGIN CARAMELIZING THE SLICED ONIONS ON TOP OF THE STOVE. I USE A COVERED CHICKEN FRYER PAN. PLACE GROUND BEEF, OATS, EGGS, CHOPPED ONION AND ALL OF THE SEASONINGS IN A BOWL AND MIX THOROUGHLY.
ONCE THE ONIONS ARE GOLDEN BROWN WHILE COOKING IN THE BUTTER AND OLIVE OIL SLIDE THEM AROUND THE PAN PLACING INDIVIDUAL SIZED MEATLOAF PATTIES
AGAINST THE BOTTOM OF THE PAN. ALLOW THE MEAT TO BEGIN BROWNING. ADDING WATER IF THE ONIONS SEEM TOO DRY.

COMBINE THE 2 DIFFERENT STYLES OF INSTANT MASHED POTATOES TOGETHER AS ONE ALLOWING THEM TO REST A COUPLE OF MINUTES.
SMOOTH THE POTATOES OVER THE ONIONS COVERING THE MEATLOAFS, CREATING A MASHED POTATO CRUST (SIMILAR TO SHEPERDS PIE).

SPRINKLE THE CHEESE ON TOP OF THE POTATOES AND PLACE THE PAN INTO A 350 DEGREE OVEN REMEMBERING TO KEEP PAN SLOWLY COOKING ON TOP OF THE STOVE WHILE ADDING THE TOPPINGS ALLOW TO FURTHER COOK 15 - 20 MINUTES.
MAKING SURE THAT THE SIDES ARE BUBBLING BEFORE TAKING OUT TO SERVE. IT WILL BE VERY HOT, BUT DELICIOUS ONCE COOLED A BIT.
