Mashed Potatoes Holiday Style

- 3 lb
- peeled russet potatoes
- 1 c
- vegetable stock , varies (don't make too wet)
- 6 Tbsp
- salt and pepper
1Peel, quarter and boil potatoes in salted water until tender.
2Drain potatoes and mash by hand. (There is just nothing like hand mashed potatoes)
3Add vegetable broth a little at a time. Add about 1 tablespoon of butter per pound of potatoes. Salt and pepper to taste.
