The theme for my meals has to be easy and family-friendly. This is great, the kids love it, and most importantly, it works well in the Crock Pot. I can throw it together before work, and dinner is magically ready when I get home. This one is a winner.

Ingredients

  • 4 tablespoons Dijon mustard
  • 1/2 cup real maple syrup
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon black pepper
  • 1 pork loin
  • 4 medium sweet potatoes

How To Make maple mustard pork loin with sweet potatoes

  • Step 1
    Mix Dijon mustard with maple syrup, salt, and pepper.
  • Step 2
    Rinse and dry the pork loin. Generously coat pork loin with the mustard mixture. Loosely cover the pork loin with aluminum foil. Place in the Crock Pot.
  • Step 3
    Wash and scrub the sweet potatoes. Wrap sweet potatoes with aluminum foil. Place sweet potatoes on top of the pork loin. Put the lid on the Crock Pot.
  • Step 4
    Cook on low for 8 - 10 hours. Serve with green salad or other veggie of your choice. We serve the sweet potatoes split longways with a butter alternative, cinnamon, and sugar.
