Maple Glazed Sweet Potatoes with Coconut

This recipe is a combination of two different recipes. I love the maple syrup sweet potatoes but it needed something. I went in search and found this wonderful coconut topping that works so well.

Although this is a side dish you would never know it was not dessert.

You will need to keep in mind that the butter must be butter as called for in the recipe.

Ingredients

1 1/2 lb
canned sweet potatoes or yams (2 15 oz cans)
1/2 c
maple syrup
1/2 c
orange juice
3 Tbsp
butter, must be butter
1 tsp
corn starch
1 tsp
grated orange peel

TOPPING

1 c
chopped pecans
1 c
flaked coconut
1 c
brown sugar
1/4 c
flour

Step-By-Step

1Preheat oven to 350 degrees Arrange sweet potatoes in 1 1/2 quart shallow baking dish.

2Combine remaining ingredients; pour over potatoes.

3Bake 20 minutes or until hot and sauce is thickened, basting frequently.

4Mix topping ingredient together until crumbly and sprinkle over the top after the 20 minutes and bake for 20 more minutes.
