6 slice bacon, cooked
1/2 c green onion, chopped
1/2 c shredded cheddar cheese

My husband loves to grill. He doesn't wait for warm weather either. He has been known to grill in the rain and even snow. He grew up grilling potatoes with butter on the grill in foil and made it for me on one of our first dates. I knew how much he loved loaded baked potatoes so I added a few ingredients and now he makes this for me and our three kids!

Directions

Combine potatoes, butter and bacon in foil pouch and seal.

Grill over medium-high indirect heat for 15-20 minutes until done.

Add green onions and shredded cheese to cooked potatoes.

Salt and pepper to taste.

Serve with a scoop of sour cream.

These look yummy, love the fact they can be cooked on the grill, less clean up for me.

Made these last weekend for my camping friends. Love this recipe and will make them again. I used chives instead of scallions just because I have them growing on my back deck. Thanks for posting!

I'm thinking that these could be cooked in the oven, too, when it's too cold or too hot to grill, like here in Kansas. It sounds wonderful. I will definitely be trying these soon since potatoes are a food group in my family.

We make something similar, new potatoes quartered, throw in some cherry tomatoes, onion, green pepper, drizzle with EVOO, dash of salt& pepper, dash garlic powder, and good dusting of parmesan....yummy!!!!

I mix potatoes, onions, carrots, bell pepper (in 4 colors) and celery. I use Mrs. Dash, original with pepper and any other desired additives. I have the ingredients in bowls and make individual packets to order.
