Ingredients For irish mashed potatoes

3 lbyukon gold potatoes, cut in 2" pieces (about 8 c)

2leeks, (white & light green parts only), halved lengthwise

8 Tbspbutter

1/2 tspsalt
-
1/4 tspcayenne pepper
-
1 cheavy whipping cream
-
1 - 8 oz. pkgsour cream
-
4scallions (both whites & greens), chopped (about 1 c)
-
1/2 cchives, bunch, fresh, chopped
How To Make irish mashed potatoes

1In large pot, combine potatoes with enough salted water to cover by 1". Bring to boil over high heat. Reduce heat to medium. Cook until potatoes are tender, about 20 minutes; drain.

2Meanwhile, cut 1 leek piece in 1/2 lengthwise; cut one 1/2 piece into thin matchsticks. In nonstick skillet, melt 2 Tbsp butter over medium heat. Add leek matchsticks; cook, stirring often until crisp & golden, 1 - 2 minutes. Using slotted spoon, transfer to paper towels.

3Cut remaining leek pieces crosswise into 1" wide chunks. In same skillet, melt remaining butter over medium heat. Add leek chunks, salt & cayenne; cook, stirring often until leeks are tender, 7 - 8 minutes. Add cream, heat through. Remove from heat; stir in sour cream. Return drained potatoes to pot; mash. Stir in cream mixture, scallions & chives. Transfer to serving dish. Garnish with frizzled leeks.
