Ingredients For hearty potato soup

3 lgred potatoes

2 cwater
-
1 lgonion
-
4 Tbspbutter
-
4 Tbspall purpose flour

red pepper flakes, to taste

black pepper, to taste

3 cmilk
-
1 tspsugar
-
2 cshredded cheddar cheese
-
1 cham, cooked & cubed (optional)
How To Make hearty potato soup

1Peel potatoes & cut into 1" cubes.

2Bring water to a boil in a large saucepan. Add potatoes & cook until tender. Drain; reserving 1 C cooking liquid (adding water if necessary); set aside. Set potatoes aside.

3Peel & finely chop onion. Melt butter in saucepan over medium heat. Add onion; cook, stirring frequently, until onion is translucent & tender, but not brown.

4Add flour to saucepan, add red pepper flakes & pepper. Cook 3 - 4 minutes.

5Gradually add potatoes, cooking liquid, milk & sugar to onion mixture; stir well. Add cheese & ham (if desired). Simmer over low heat 30 minutes, sitrring frequently. Serve with fresh bread.
