Ingredients For hearty potato soup

  • 3 lg
    red potatoes
  • 2 c
    water
  • 1 lg
    onion
  • 4 Tbsp
    butter
  • 4 Tbsp
    all purpose flour
  • red pepper flakes, to taste
  • black pepper, to taste
  • 3 c
    milk
  • 1 tsp
    sugar
  • 2 c
    shredded cheddar cheese
  • 1 c
    ham, cooked & cubed (optional)

How To Make hearty potato soup

    Peel potatoes & cut into 1" cubes.

    Bring water to a boil in a large saucepan. Add potatoes & cook until tender. Drain; reserving 1 C cooking liquid (adding water if necessary); set aside. Set potatoes aside.

    Peel & finely chop onion. Melt butter in saucepan over medium heat. Add onion; cook, stirring frequently, until onion is translucent & tender, but not brown.

    Add flour to saucepan, add red pepper flakes & pepper. Cook 3 - 4 minutes.

    Gradually add potatoes, cooking liquid, milk & sugar to onion mixture; stir well. Add cheese & ham (if desired). Simmer over low heat 30 minutes, sitrring frequently. Serve with fresh bread.
