- potatoes, large
- 2 c
- cheese, mild or sharp, shredded
- 1/4 c
- 1 1/2 c
- sour cream [1 large container]
- 1/3 c
- onion, chopped finely
- salt, pepper, paprika
1Boil potatoes in skins. Cool, peel and dice. Set aside.
2In sauce pan, over low heat, combine cheese and butter. Stir occasionally until almost melted. Remove from heat and blend in sour cream, onion, salt, pepper, and paprika to your own taste.
3fold in potatoes and turn into a greased 9 x 13 inch pan. Dot with two tablespoons of butter and a little more cheese.
4Bake uncovered at 350 degrees for 30 minutes.
