Golden Ranch Potatoes

A great potato side dish with ranch flavor!

Ingredients

3 lb
yukon gold potatoes, scrubbed & cut into cubes
3/4 c
diced onion
1/4 c
diced green pepper (optional)
1/4 c
diced red pepper (optional)
1/2 c
vegetable oil
2
(1 oz) envelopes ranch salad dressing/seasoning mix

Step-By-Step

1Grease a 4 liter pan & preheat oven to 400.
2Mix vegetables together. Mix oil and seasoning mix together (I use a small wire whisk). Do this right before using, or it will harden.
3Pour oil mixture over vegetables and mix well. Put into prepared pan and cover with foil.
4Bake for 1 hour, or until potatoes are tender, stirring 1/2 way through.
