Frying Pan Loaded Potatoes

- yukon gold potatoes (sliced thinly)
- 4 slice
- 1 medium
- onion large diced
- 1 c
- sharp cheddar cheese shredded
- 1/2 c
- sour cream
- 1 tsp
- 1 tsp
- black pepper
1In a large non-stick frying pan cook 4 slices bacon until crisp and set aside leaving fat rendered in the pan.
2Put onions in pan and cook about 5 minutes. Add thinly sliced potatoes, salt & pepper and after mixing them with a wooden spatula put the lid on the pan and cook on medium low heat (stirring often) for about 20 minutes or until potatoes are tender.
3When potatoes are done, add cheese on top and put lid back on pan until cheese melts - about one minute.
4After cheese melts, put 4 dollops of sour cream plus the bacon that you have crumbled on top and serve.
