Ingredients

1/4 c olive oil
1 md onion, minced
2 clove garlic, minced
1 tsp dried dillweed
1/2 tsp dried rosemary
1/2 tsp dried thyme
1/4 tsp salt
1/4 tsp fresh ground black pepper
6 md scrubbed baking potatoes, halved lengthwise
3-4 dash(es) olive oil to drizzle tops of potatoes

I found this recipe in an old cookbook and made changes to suit us. I hope you enjoy it as much as we do as it's a favorite!

 

Directions

Drizzle olive oil on the bottom of a 13 x 9 x 2-inch baking pan. Set aside.

In a small bowl, whisk together the garlic, onion, dried dill weed, rosemary, thyme, salt and pepper. Sprinkle evenly over the bottom of the baking pan. Set aside.

Place the potatoes, cut side down, in prepared pan. Drizzle lightly with olive oil.

Bake in a preheated 350 degree oven for 45 minutes or until potatoes are tender.

These are best when baked uncovered, basting occasionally with the oil in the pan.
