Ingredients
- 2 sticks butter
- 2 large onions, diced
- 2 pounds hash brown potatoes, cubed or shredded, frozen, thawed
- 1 pound bulk pork sausage, mild, sweet or hot, no casings
- salt & pepper, to taste
- 2 cups cheddar cheese, shredded
- 8 x large eggs
How To Make eggs 'n cheesy hash for a bash

Step 1Preheat oven to 400 degrees F. Coat a 9" x 13" baking dish with cooking spray.

Step 2In a large skillet over medium high heat, melt butter; saute onions 5 minutes. Add crumbled sausage & cook 6 - 8 minutes, or until browned. Add hash brown potatoes & cook 10 - 12 minutes, stirring occasionally. Season with salt & pepper. Turn off heat & cool 5 - 8 minutes. Stir in cheese.

Step 3Place mixture in prepared baking dish. With a serving spoon, make 8 evenly spaced indentations about 1/2" deep in mixture. Crack eggs one at a time & place each egg in an indentation.

Step 4Cover with aluminum foil & bake 35 - 45 minutes, or until eggs are cooked to your desired doneness.
