Ingredients
- 6 slices bacon, chopped fine
- 1 large onion, chopped fine
- 3 - 8 oz bottles clam juice
- 2 cups water
- 1 1/2 pounds russet potatoes, peeled & cut into 1/2" pieces
- 20 saltine crackers, crushed
- 1 teaspoon thyme, dried
- 1 bay leaf
- 2 pounds clams with juice, drained, rinsed & chopped fine
- 1 cup heavy cream
- salt & pepper, to taste
How To Make easy clam chowder

Step 1Cook bacon in a large pot over medium heat until crisp, about 6 - 8 minutes. Transfer bacon to paper towels to drain. Reserve 3 tbsp bacon drippings. Add onion & cook until softened, about 5 minutes. Add clam juice, water, potatoes, saltines, thyme & bay leaf & bring to boil. Reduce heat to medium & simmer, stirring occasionally, until potatoes are tender, about 20 minutes.

Step 2Using a slotted spoon, trasnfer 1/2 C potatoes to bowl & mash them with masher until smooth. Return to pot. Reduce heat to low. Stir in clams & simmer until cooked through, about 5 minutes. Turn off heat & stir in cream, bacon & season with salt & pepper. Enjoy!
