Ingredients For easy clam chowder

  • 6 slice
    bacon, chopped fine
  • 1 lg
    onion, chopped fine
  • 3 - 8 oz bottle
    clam juice
  • 2 c
    water
  • 1 1/2 lb
    russet potatoes, peeled & cut into 1/2" pieces
  • 20
    saltine crackers, crushed
  • 1 tsp
    thyme, dried
  • 1
    bay leaf
  • 2 lb
    clams with juice, drained, rinsed & chopped fine
  • 1 c
    heavy cream
  • salt & pepper, to taste

How To Make easy clam chowder

    Cook bacon in a large pot over medium heat until crisp, about 6 - 8 minutes. Transfer bacon to paper towels to drain. Reserve 3 tbsp bacon drippings. Add onion & cook until softened, about 5 minutes. Add clam juice, water, potatoes, saltines, thyme & bay leaf & bring to boil. Reduce heat to medium & simmer, stirring occasionally, until potatoes are tender, about 20 minutes.

    Using a slotted spoon, trasnfer 1/2 C potatoes to bowl & mash them with masher until smooth. Return to pot. Reduce heat to low. Stir in clams & simmer until cooked through, about 5 minutes. Turn off heat & stir in cream, bacon & season with salt & pepper. Enjoy!
