EASY, CHEESY POTATO BAKE
|1||2 lb bag refigerated shredded hashbrown potatoes|
|2 c||light sour cream|
|2 c||reduced fat, shredded sharp cheddar cheese, plus 1/2 cup cheese for topping|
|2 can(s)||low-fat cream of chicken soup|
|1 bunch||green onions, sliced|
|2 c||crushed cornflakes|

So easy to make. Creamy, cheesy and yummy! This is great for breakfast, but also goes well with some dinner recipes, like baked herbed chicken.
Heat oven to 350. Lightly spray 9" x 13" casserole dish w/ cooking spray. In lg bowl, combine sour cream, 2 cups cheese, soup and onions, Mix well.
Add hashbrowns and mix well. In another bowl, mix remaining cheese w/ crushed cornflakes. Spoon potato mix into casserole dish. Cover, bake 40 mins.
Remove from oven, sprinkle cornflake mix evenly over top of casserole. Bake, uncovered 15 mis, or until top of casserole is browned lightly.
