Easy Baked Cottage Fries

These are very easy to make and a great side dish. Crunchy and healthier then deep frying.

Ingredients

4 medium
russet potatoes peeled and sliced 3/8 inch thick
1 tsp
salt
1/2 tsp
pepper and cayenne pepper
1 Tbsp
herbs de provence
3 Tbsp
olive or canola oil

Step-By-Step

1Place potatoes in a bowl. Drizzle the oil over and sprinkle all the seasonings on them mixing to try to coat as evenly as you can.
2Preheat oven 425 degrees. Use a slip mat or parchment paper. Lay the potatoes in a single layer on paper. Will have to use probably two large baking sheets.
3Bake until browned probably 15 minutes or so. Flip and bake until other side is browned.
