E - Z Potatoes and Eggs

- potatoes, cubed or sliced thick, par- boiled, till fork tender
- eggs, whipped
- 4 Tbsp
- butter, melted
- cooked and crumbled bacon, sausage, or ground beef (optional)
- seasonings of your choice.
1Melt butter in skillet, then toss in potatoes & brown slightly.
2Pour in eggs and seasonings, and cook, stirring, till eggs are cooked through.
3Can also add cooked bacon, sausage, or ground beef, if desired.
