Double Potatoes ! or 2 Birds with one Stone!
I get two styles of potatoes with just the amount of work of doing one style!
This is a win win win time saver!
I peel the potatoes by cutting the skin off kind of thick... I have two pans of water... one for the cut up potatoes and one for the skins.
I store the skins in containers in the refrigerator for a couple of days until I am ready for them to be made into fries. I cook the cut up potatoes in soups, stews or as mashed...
- 5 - 10 lb
- potatoes of choice (scrubbed well)
Heat oil for frying. Place some of the potato skins in the hot oil and fry until golden and fully cooked like french fries.
Serve these rustic fries as part of a meal or as a snack just as you would other fries!
