Ellen's Notes:

This old recipe literally fell out of the sky. I was sitting at my desk, minding my own business, when I saw this yellowed piece of newspaper clipping on the floor. It was torn out of the Indianapolis Star back in the Ice Age, and the credit apparently goes to Heloise. The recipe couldn't be more simple and it is very close to what I have made for years.

Directions

1
In a medium bowl, combine all ingredients. Form into pancake-size patties. Dip each patty in a little flour, covering both sides.
2
In a large skillet, heat 2 tablespoons oil or butter. Add patties. Cook over medium heat about 10 minutes on each side until golden brown and heated through.
3
Remove from pan and drain on paper towels. Serve while hot.
4
NOTE: For variety, you could add 1/2 cup shredded cheddar cheese to the mixture.

I make mine almost the same, but haven't coated them in flour. I'll try that next time or maybe coat them in Panko! I also mix in a can of drained salmon, at times. My family loves them either way!
