Crunchy New Potatoes

- small new red potatoes
- (0.4 ounce) package ranch dressing mix
- 2 c
- crushed cornflakes
- 1/2 c
- (1 stick) melted butter
1Cook the potatoes in boiling water until tender, 20 to 25 minutes.
2Preheat the oven to 400.
3Drain the potatoes and let cool slightly, then peel them.
4Mix dressing mix and the cornflakes in a bowl.
5Dip the potatoes in the melted butter, then roll them in the cornflake mixture.
6Place the potatoes in a greased baking dish and bake for 20 to 25 minutes, or until golden brown.
