Crockpot Sweet Potato Casserole

Delicious and easy side dish you can do ahead of time. This recipe "won over" family members who had claimed to not like sweet potatoes.

Ingredients

58 oz
cans sweet pototoes, drained and mashed
1/3 c
butter, melted
2 Tbsp
white sugar
2 Tbsp
brown sugar
1 Tbsp
orange juice
2
eggs, beaten
1/2 c
milk

TOPPING

1/3 c
pecans, chopped
1/3 c
brown sugar
2 Tbsp
all-purpose flour
2 tsp
butter, melted

Step-By-Step

1Lightly grease a slow cooker. In a large bowl, blend sweet potatoes, 1/3 cup melted butter, white sugar and brown sugar. Beat in orange juice, eggs and milk.

2Transfer this mixture to the prepared slow cooker.

3In small bowl, combine ingredients for topping: pecans, brown sugar, flour and melted butter. Spread the topping over the sweet potatoes.

4Cover the slow cooker and cook on High for 3-4 hours.
