|3 Tbsp||instant mashed potatoes, dry|
|1/2 tsp||cayenne pepper|
|1 tsp||herbes de provence|

DirectionsIn a shallow bowl, whisk together 1/2 cup flour, cornstarch, instant mashed potatoes & herbs.Whisk in buttermilk & allow to sit while you cut the onions. The mixture will thicken.Preheat deep fryer to 350 degrees F.Pour panko bread crumbs into another shallow dish & flour for dredging into a third dish.Dip onion rings into the remaining flour, then into the batter & coat well & then coat with panko bread crumbs. Drop onion rings immediately into hot oil. Brown on both sides, about 2 minutes. Drain on wire rack over sheet pan. Enjoy!!!
