Ingredients
- 1 1/2 pounds red potatoes, small, scrubbed & cut into 1/2" cubes
- water
- 4 cornichons, finely chopped
- 1 tablespoon cornichon liquid
- 1/3 cup mayonnaise, light
- 1 shallot, finely chopped
- 1 1/2 tablespoons parsley
- 2 teaspoons tarragon, dried
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon garlic powder
How To Make creamy red potato salad

Step 1Combine potatoes & enough water to cover them by 1" in a medium saucepan & bring to boil. Reduce heat & simmer until potatoes are tender, 10 minutes. Drain.

Step 2DRESSING: Meanwhile, make dressing...in a large bowl combine cornichons, their juice, mayo, shallot, parsley, tarragon, salt, pepper & garlic powder; whisk to combine.

Step 3Stir hot potatoes in dressing; toss well. Serve warm or at room temperature.

Step 5What are cornichons? Cornichons are small pickled gherkins, which are a variety of cucumber. Cornichons are a traditionally served as a condiment with a number of classical French dishes like pate. Cornichons have a tart, mildly sweet flavor & they are used for both flavoring & as a garnish. Cornichons are frequently paired with capers. Many recipes incorporate chopped cornichons, including beef stroganoff & steak tartare, as well as various cold salads like egg salad or potato salad. Cornichons complement pork dishes, such as grilled pork chops & are often included in sauces for pork. Classic sauces featuring cornichons include the Charcutière sauce & Gribiche sauce. NOTE: I have found Cornichons at Trader Joes.
