Ingredients

2 lb package frozen, cubed hash brown potatoes
8 oz shredded velveeta, or cheddar can be used
8 oz sour cream
1 can(s) cream of celery soup
1 can(s) cream of chicken soup
1 lb bacon, cooked and crumbled
1 large onion, chopped
1/4 c butter, melted
1/4 tsp pepper, or more to your taste

Now these are some creamy potatoes!  This dish makes an excellent side at breakfast OR at the dinner table.  If you don't just love onions, you may want to cut back a little on the amount you use... The hash browns will still come out great.

 

Directions

Place potatoes in greased crockpot. In a bowl combine the remaining ingredients. Pour over potatoes and mix well. Cover and cook on low 4-5 hours, or until potatoes are tender and heated through.

I have made this several times. Great for holiday potlucks, and large gatherings. The pot is always empty when i make this

I found this recipe in a Gooseberry Patch cookbook last week, and made it for a funeral dinner. Lots of positive comments! With the little bit I had left, I added milk and made potato soup. Wonderful recipe!

I assume it's cooked on 'low'? I haven't used my crock pot that much over the years and just wanted to make sure. I only have two settings--low or high.

Never mind--I put it on high and it was perfect by the time we got home from church! My father said it tastes just like the potato soup from his favorite restaurant (Cheddars!) What is great about this recipe is you can have the ingredients always on hand and throw it together before you leave in the morning and have it ready to go when you get home. I love recipes like that! Thanks!

Hi Roxanna, I just had these for the first time at the Just A Pinch TV show that was taped this past Saturday in Franklin, and your recipe absolutely ROCKED. It tasted great and I loved the innovation of cooking them in the crock pot. Way to go! Thanks for sharing.

These sound so delicious! I can't wait to try them. I love making different recipes using the frozen hashbrowns. I have a really good recipe that calls for 2c Miracle Whip, 1# Velveeta, and 1 jar of Baco's, mixed with 2 bags of hashbrowns. Same baking directions as your recipe...they are awesome and everyone asks for the recipe. I hope if anyone tries to make them, you let us know if you liked them.
