Creamy Chive Mashed Tatoes for 2

russet potatoes, peeled & quartered
chives, fresh & chopped
In a large pot place potatoes & cover with cold water.
Season with some salt & bring to a boil about 40mins or until tender.
Drain the potatoes & return to the pot. mash them with the warm milk until smooth.
Fold in the cheese & chives. Taste & season with more salt if need.
