- russet potatoes, peeled & quartered
- 1/4 c
- chives, fresh & chopped
- 4 oz
- mascarpone cheese
- 1 tsp
- 1 c
- milk, warm
1In a large pot place potatoes & cover with cold water.
2Season with some salt & bring to a boil about 40mins or until tender.
3Drain the potatoes & return to the pot. mash them with the warm milk until smooth.
4Fold in the cheese & chives. Taste & season with more salt if need.
