Ingredients For colcannon potatoes

  • 2 lb
    cabbage, shredded
  • 2 c
    water
  • 4 lb
    potatoes, peeled & quartered
  • 2 can
    evaporated milk
  • 1 c
    green onions (both greens & whites), chopped
  • salt & pepper, to taste
  • 1/4 c
    butter, melted
  • 6 slice
    bacon, cooked crisp & crumbled
  • 3 Tbsp
    parsley flakes

How To Make colcannon potatoes

    In a large saucepan, bring cabbage & water to a boil. Reduce heat; cover & simmer for 10 - 12 minutes or until tender. Drain, reserving cooking liquid. Keep cabbage warm.

    Place cooking liquid & potatoes in a large saucepan; add enough additional water to cover the potatoes. Bring to a boil. Reduce heat; cover & cook for 15 - 17 minutes or until tender. Drain & keep warm.

    In a small saucepan, bring milk & onions to a boil; remove from the heat. In a large bowl, mash potatoes. Add milk mixture; beat until blended. Beat in the cabbage, salt & pepper. Drizzle with the melted butter, bacon & parsley.
