Ingredients For colcannon potatoes

2 lbcabbage, shredded
-
2 cwater
-
4 lbpotatoes, peeled & quartered
-
2 canevaporated milk
-
1 cgreen onions (both greens & whites), chopped

salt & pepper, to taste
-
1/4 cbutter, melted
-
6 slicebacon, cooked crisp & crumbled
-
3 Tbspparsley flakes
How To Make colcannon potatoes

1In a large saucepan, bring cabbage & water to a boil. Reduce heat; cover & simmer for 10 - 12 minutes or until tender. Drain, reserving cooking liquid. Keep cabbage warm.

2Place cooking liquid & potatoes in a large saucepan; add enough additional water to cover the potatoes. Bring to a boil. Reduce heat; cover & cook for 15 - 17 minutes or until tender. Drain & keep warm.

3In a small saucepan, bring milk & onions to a boil; remove from the heat. In a large bowl, mash potatoes. Add milk mixture; beat until blended. Beat in the cabbage, salt & pepper. Drizzle with the melted butter, bacon & parsley.
