My mother's note- This is an Irish recipe and goes very well with the corned beef.

Ingredients For colcannon

  • 4 md
    potatoes
  • 1/3 c
    hot milk
  • salt and pepper to taste
  • 6 Tbsp
    butter
  • 2 c
    cabbage, shredded
  • 2 Tbsp
    chopped onions

How To Make colcannon

  • 1
    Cook and mashed potatoes. Add milk, salt and pepper.
  • 2
    Melt 4 Tbsp butter over low heat. Add cabbage and onion. Cover tightly and cook over low heat until tender, about 5 minutes
  • 3
    Mix cabbage mixture into potatoes. Melt remaining bitter, then make a well in potatoes and pour in melted butter.
