If anyone loves cabbage this is the dish for them.I grew up eating this as I am from Ireland it was a staple in our house,It serves a lot of people depending how big an eater they are lol!

Ingredients For colcannon

  • 1-2 lb
    cooked boiled potatoes
  • 1 sm
    savoy cabbage or regular will do to (cooked)
  • little milk,if necessary.
  • 2 Tbsp
    irish butter (plus a little more for serving)
  • 1 md
    onion finely chopped
  • salt & pepper to taste

How To Make colcannon

  • 1
    Mash the cooked potatoes Chop the cabbage and add it to the potatoes and give it a good mixing,Stir in a little milk if it is to stiff.Melt a little butter in large fry pan over medium heat,Add your onion and cook till softened,Add to potato mixture and give it a good stir.Now add the rest of your butter to the fry pan let it get hot then add your cabbage and potato mixture, Spread out in the pan an let it get nice and brown break up and let it get crispy and brown.Serve as a side dish or in small bowls with a nob of butter on top. Enjoy! :
