Ingredients For cheesy potato salad

  • 3 lb
    new red potatoes, quartered
  • 1/2 c
    water
  • 1/2 c
    zesty italian dressing
  • 2 - 8 oz pkg
    cream cheese, room temperature, cubed, room temperature
  • 10 slice
    bacon, cooked crisp & crumbled
  • 1 lg
    red onion, chopped
  • 1 jar
    banana peppers, sliced & drained
  • 2 jar
    mushrooms, sliced & drained
  • 8 oz
    cheddar cheese, shredded

How To Make cheesy potato salad

    In a large bowl, mix dressing & cream cheese; mix well to combine.

    Add potatoes in 2 qt microwaveable dish. Add water; cover with lid. Microwave on HIGH 12 - 15 minutes or just until potatoes are tender; drain. Place in large bowl. Add dressing mixture to hot potatoes; toss to coat. Refrigerate 1 hour or until completely cooled.

    Add remaining ingredients; mix lightly. Refrigerate at least 3 hours for flavors to marry & enjoy!
