Ingredients For cheesy onion baked mashed taters

  • 2 lb
    red potatoes, small
  • 1 - 8 oz pkg
    cream cheese, room temperature
  • 1 stick
    butter
  • 1 - 8 oz pkg
    sour cream
  • 2 x lg
    eggs
  • 1/2 c
    milk
  • 2 tsp
    salt
  • 1 tsp
    pepper
  • 1 - 2 Cup pkg
    shredded cheese, your choice
  • 1 can
    french fried onions

How To Make cheesy onion baked mashed taters

    Cook potatoes until tender. Cool slightly; peel. In a large bowl mash the hot potatoes.

    Cut cream cheese into small pieces & add to potatoes along with butter. Beat well & then add sour cream.

    Beat eggs, milk, salt & pepper together & add to potatoes. Beat well.

    Pour mixture into a greased 2 qt casserole. Cover & refrigerate overnight.

    Bake at 350 degrees F for 25 minutes.

    Sprinkle cheese evenly with cheese; then fried onions; bake another 20 – 25 minutes or until onions are golden brown.
