This is such an easy, delicious "comfort food" and goes well with most any meal. If you need more, just add a few more potaotes.

Ingredients For cheesy crockpot potatoes

    medium potatoes, cubed into bite-sized pieces, i prefer red potatoes, but use your choice
  • 1
    stick margarine or butter
  • 1 onion
    sliced or chopped
  • 1
    can cream of chicken soup, lower salt or lower fat is fine
  • 8
    oz. cheddar cheese, your choice of of medium or sharp
  • 8
    oz. lite sour cream

How To Make cheesy crockpot potatoes

    Cube potatoes into bite-sized pieces and cook on top of stove in boiling water for about 5 minutes, don't boil too much as they will become mushy, I bring the water to a boil, then turn on lower heat, also start boiling potatoes with cold, salted water to prevent "mushiness". Cook just enough to get them started to cooking good in the crockpot. Mix rest of ingredients together. (I slice the onions for the picky ones in my family to pick out, they like things cooked with onions, they just won't eat them.) Put potatoes in crockpot sprayed with cooking spray or use a crockpot liner for easy cleaning. Put other ingredients on top of potatoes. Cook on high until they get good and hot, then turn on low. Stir once while cooking to mix all ingredients well. Cook until tender and slightly thickened. Garnish with parsley flakes or shredded cheese.

    **I made these this past weekend for a church dinner and added ham cubes and topped with shredded cheddar cheese and crumbled bacon. They were a hit!
