Ingredients

8 slice
bacon
2 medium
onions
2 pkg
frozen chopped spinach
2 pkg
scalloped potatoe mix
1 qt
milk
4 tsp
caraway seeds
2 c
shredded mozzarella cheese.
8 oz
button mushroom

Step-By-Step

1You will need a 12-14"cast iron dutch oven. In the dutch oven,cook bacon till crisp.Drain,reserve 2 table spoons of drippings. crumble bacon and set aside.

in the dutch oven cook onions & mushrooms in drippings till tender.Add spinach heat through. remvoe and set aside.

2in the dutch oven combine potatos and dry sauce mix from package,stir in boiling water and milk as directed on packagr Leave out butter. stir in onions,mushrooms,spinach,and caraway seed.

3Bake with coals under pot & 10-12 on lid. bake for 30 min. Remove lid (carefully do not dump coals),sprinkle top with cheese replace lid . bake for 2-3 min. Let stand out of fire for 5-10 min.
