Ingredients
| 3 c | leftover mashed potatoes (see note) |
| 1 3/4 c | shredded cheese, your choice i had a mixture of cheeses on hand |
| 3 | turns of the peppermill |
| 1/4 tsp | kosher salt |
| 1 tsp | crushed red pepper |
| 4 Tbsp | sourcream |
| french onions |

Directions
Mix the first 6 ingredients together in a medium bowl. Spray a 2 quart casserole dish with cooking spray. Add the potato mixture and top with french onions. Place in a preheated over at 350° for 20-25 minutes or until the french onions are golden.Note: When I make mashed potatoes I keep the skins on. But you can remove them. Your preference.
